Saba simmered in Miso

Saba is a very popular fish in Japan. It's meat is very flavorful and contains a great amount of healthy fish oil. Miso and fresh ginger set off this fish best.

Ingredients (2 servings)

Sabe (Mackerel).............................................. 1 whole fish (2 fillets)

Ground ginger................................................. 1 tbs

Green Onion................................................... 3

Miso.............................................................. 2 tbs

Sauce

Water............................................................. 1 cup

Sake.............................................................. 1/3 cup

Sugar............................................................. 1 1/2 tbs

Soy Sauce ...................................................... 1/2 tbs

Miso............................................................... 1 tbs

Sliced Ginger................................................... 3 slices

Directions

1. Cut saba filet into two pieces. Make crosswise cut on skin side so that meat will absorb the miso sauce well.


2. In a wide flat pan, bring sauce to a boil and add saba with skin side up. Cover with aluminum foil and simmer over mid-range heat for 8~10 min.


3. Take off the aluminum foil. Flip over saba to put skin side down. Add green onion, ground ginger and 2 tbs miso and cook for 5 min until sauce is dried to half original amount.


4. Serve saba, green onion and miso sauce over cooked rice.
