Ingredient (4 servings)

Smelt .................................   1lb

Water .................................  1.5 cup

Salt ....................................   2 tbs

Directions

1. Mix 2 tbs salt in 1.5 cup water and soak smelt in the salt water. Leave 10-15 munities.

2. Drain salt water. Broil smelt at high heat for 8 minutes each side. It tastes best with crunchy texture when fish is cooked well until skin is slightly burned.
